Description

This creamy roasted garlic cheddar cauliflower soup is a comforting and flavorful dish, perfect for a chilly day. It combines the sweetness of roasted garlic and cauliflower with the richness of sharp cheddar cheese for a velvety smooth soup.


Ingredients

  • 1 medium head cauliflower, cut into florets
  • 1 whole head garlic
  • 1 cup sharp cheddar cheese, shredded
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, chopped
  • 2 tbsp olive oil
  • ½ cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25 minutes until golden.
  2. Prepare the garlic by slicing off the top of the head, drizzling with olive oil, wrapping in foil, and placing in the oven during the last 20 minutes of roasting.
  3. In a large pot over medium heat, sauté chopped onion in olive oil until soft (about 5 minutes).
  4. Add roasted cauliflower and vegetable broth to the pot. Squeeze out roasted garlic cloves into the mixture. Simmer for about 10 minutes.
  5. Blend soup until smooth using an immersion blender. For texture, blend less.
  6. Return to low heat; stir in shredded cheddar and cream until melted and smooth.
  7. Serve warm.

Notes

  • For a different cheese flavor, try Gruyère or mozzarella.
  • Add crushed red pepper flakes or cayenne pepper for a spicy kick.
  • Garnish with crispy bacon bits for added crunch.
