- 1 medium head cauliflower, cut into florets
- 1 whole head garlic
- 1 cup sharp cheddar cheese, shredded
- 4 cups low-sodium vegetable broth
- 1 medium onion, chopped
- 2 tbsp olive oil
- ½ cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25 minutes until golden.
- Prepare the garlic by slicing off the top of the head, drizzling with olive oil, wrapping in foil, and placing in the oven during the last 20 minutes of roasting.
- In a large pot over medium heat, sauté chopped onion in olive oil until soft (about 5 minutes).
- Add roasted cauliflower and vegetable broth to the pot. Squeeze out roasted garlic cloves into the mixture. Simmer for about 10 minutes.
- Blend soup until smooth using an immersion blender. For texture, blend less.
- Return to low heat; stir in shredded cheddar and cream until melted and smooth.
- Serve warm.

- For a different cheese flavor, try Gruyère or mozzarella.
- Add crushed red pepper flakes or cayenne pepper for a spicy kick.
- Garnish with crispy bacon bits for added crunch.
