- 1 pound Italian sausage, casings removed
- 8 ounces cremini mushrooms, sliced
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 cup sour cream
- 2 teaspoons Dijon mustard
- 8 ounces egg noodles
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- Chopped fresh parsley, for garnish
Instructions
- Bring a large pot of salted water to a boil and cook egg noodles according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove sausage from pan and set aside.
- In the same skillet, add onion and mushrooms. Cook until softened and lightly browned, about 5 minutes. Stir in the garlic and cook for 1 minute more.
- Sprinkle flour over vegetables and stir well. Gradually pour in beef broth, stirring to dissolve the flour. Bring to a simmer and cook until slightly thickened, about 3 minutes.
- Reduce heat to low. Stir in sour cream and Dijon mustard, mixing until the sauce is creamy and smooth. Return the cooked sausage to the skillet. Season with salt and black pepper to taste.
- Add the cooked egg noodles to the skillet and toss to coat with the creamy sausage sauce. Garnish with chopped fresh parsley before serving.
Notes
- Full-fat sour cream or plain Greek yogurt is recommended to prevent splitting.
- If you don’t have smoked paprika, regular paprika is fine, but consider adding a dash of Worcestershire sauce for extra flavor.
- If mushrooms stick to the pan, add a splash more broth or water.
- Turkey sausage can be used but may result in a drier dish; add extra butter if using.
- For a dairy-free version, try oat cream or coconut yogurt, adding slowly and tasting as you go.
- Capers can be added for a briny flavor, but are not traditional.
- Leftovers can be stored in an airtight container in the fridge for 2-3 days, though the sauce may split upon reheating.
