Description
Pan-seared salmon in a rich garlic Parmesan cream sauce with sun-dried tomatoes and spinach. A fast, elegant Italian-inspired dinner.

- 4 salmon fillets (skin-on or skinless)
- 1 tbsp olive oil
- 1 tbsp butter
- 3 cloves garlic (minced)
- 0.5 cup sun-dried tomatoes (chopped)
- 1 cup heavy cream
- 0.5 cup chicken broth
- 0.5 cup Parmesan cheese (grated)
- 1 tsp Italian seasoning
- 1 tsp paprika
- 2 cups spinach (fresh)
- Salt and pepper (to taste)
Instructions
- Season salmon with salt, pepper, and paprika.
- Heat olive oil and butter in a skillet over medium-high heat.
- Sear salmon 3–4 minutes per side until golden, then remove from skillet.
- Lower heat and sauté garlic for 30 seconds.
- Add sun-dried tomatoes and cook 1 minute.
- Pour in heavy cream and chicken broth; stir well.
- Add Parmesan and Italian seasoning; simmer to thicken.
- Stir in spinach until wilted.
- Return salmon to skillet and spoon sauce over the top.
- Simmer 2–3 minutes until salmon is fully cooked.

- This dish serves well with pasta or rice.
