Description

A simple and satisfying one-pan dish featuring golden pan-seared gnocchi with a crispy edge, wilted spinach, and briny feta cheese, finished with lemon zest and juice for a bright flavor.


Ingredients

  • 1 package (16 oz) shelf-stable gnocchi
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 5 ounces fresh spinach
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1/2 cup crumbled feta cheese
  • Zest of 1 lemon
  • Juice of 1/2 lemon

Instructions

  1. Heat olive oil in a large nonstick or cast-iron skillet over medium-high heat. Add gnocchi in a single layer. Cook for 3–4 minutes until golden and crispy on one side. Flip and cook for another 3–4 minutes. Transfer gnocchi to a plate.
  2. Lower heat to medium. Add more olive oil if needed. Add minced garlic and sauté for 30 seconds until fragrant. Add fresh spinach and red pepper flakes, stirring until spinach wilts, about 1–2 minutes.
  3. Return crispy gnocchi to the pan. Stir in crumbled feta, lemon zest, and juice. Toss gently to combine and warm the feta slightly. Season with salt and pepper to taste.
  4. Serve warm in shallow bowls, with an extra sprinkle of feta or squeeze of lemon if desired.
