- 3–4 medium sweet potatoes, sliced very thinly (about 1/8 inch thick)
- 2–3 tablespoons olive oil
- 1/2 cup finely grated Parmesan cheese
- 1–2 teaspoons fresh thyme, finely chopped (or 1/2 teaspoon dried thyme)
- 1/2 teaspoon garlic powder (optional)
- 1/2 teaspoon smoked paprika (optional)
- Salt, to taste
- Black pepper, to taste
- Optional breadcrumbs or gluten-free panko, to taste
- Fresh thyme sprigs or chopped parsley, for garnish
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange your sliced sweet potatoes so they’re ready to go on the sheet.
- Toss the sliced potatoes with olive oil, salt, pepper, garlic powder, and paprika until every slice glistens lightly.
- Arrange the slices in small, tight circles or stacks on the prepared sheet, alternating slices to create a little tower with Parmesan tucked between layers.
- Sprinkle a generous pinch of Parmesan over each stack, followed by a sprinkle of thyme. If using breadcrumbs, toss them on now and press into the crust.
- Bake for 20–25 minutes, then turn the stacks carefully and bake for another 5–10 minutes, or until the edges are golden brown and the centers are tender. The tops should be deeply caramelized and the parmesan crust should look irresistibly crisp.
- Remove from the oven and let rest for 5 minutes. Garnish with fresh thyme or parsley, and serve while hot for maximum crunch.
