Ingredients

  • 2 cups elbow macaroni (uncooked)
  • 2 cups shredded chicken (cooked)
  • 1 cup barbecue sauce
  • 2 cups cheddar cheese (shredded)
  • 8 oz cream cheese (cubed)
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • Salt to taste (Optional)

Instructions

  1. Gather all your ingredients and measure them out.
  2. Cook the elbow macaroni according to package instructions until it’s al dente. Drain and set aside.
  3. In the crockpot, combine the cooked macaroni, shredded chicken, barbecue sauce, cream cheese, milk, garlic powder, onion powder, black pepper, and optional salt. Stir until everything is well incorporated.
  4. Gently fold in 1.5 cups of shredded cheddar cheese, saving 0.5 cups for topping later.
  5. Cover the crockpot and cook on low for 2 to 3 hours, stirring occasionally.
  6. About 15 minutes before you’re ready to serve, sprinkle the reserved 0.5 cups of cheddar cheese on top of the mixture.
  7. Cover the crockpot again to allow the cheese to melt until bubbly.
  8. Once the cheese is melted and the dish is bubbling, stir everything together and serve warm.

Notes

  • Use rotisserie chicken for convenience.
  • Leftover barbecue chicken adds flavor.
