- 3 cups butternut squash, peeled and cubed
- 1/4 cup maple syrup
- 3 tablespoons Dijon mustard
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Season chicken with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Sear chicken for 2–3 minutes per side until golden brown.
- Meanwhile, peel and cube the butternut squash into even bite-sized chunks.
- In a bowl, whisk together maple syrup, Dijon mustard, minced garlic, chicken broth, thyme, and rosemary.
- Place butternut squash into the bottom of the crockpot.
- Layer the seared chicken on top of the squash.
- Pour the maple-dijon sauce evenly over everything.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender and squash is soft.
- Gently stir to combine flavors and serve warm.
