Ingredients

  • 1 cup Almond milk
  • 1/2 cup Powdered sugar
  • 1/4 teaspoon Salt
  • 1 cup Pistachios (raw and unsalted)

Instructions

  1. Start by adding a couple of cups of water to a small saucepan and place it over high heat. Once it reaches a rolling boil, gently add in the pistachios.
  2. Allow the pistachios to boil for 3-4 minutes to loosen their skins.
  3. Carefully drain the pistachios, then place them on a clean kitchen towel. Rub the pistachios with the towel to remove their skins completely.
  4. Ensure the pistachios are completely dried, then spread them out on a baking tray. Roast in a preheated oven for about 9 minutes until fragrant and lightly golden.
  5. Transfer the skinned pistachios into a food processor. Add in the powdered sugar, salt, and almond milk.
  6. Blend the mixture until creamy and smooth, scraping down the sides as needed.
  7. Spoon the dairy-free pistachio cream into a mason jar and allow it to cool completely before securing the lid.
