Ingredients
Scale
- 1 lb ground lamb (or a mix of lamb and beef)
- 1/2 cup onion (finely grated)
- 2 cloves garlic (minced)
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika (smoked or sweet)
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 pita breads (or flatbreads)
- 1 cup shredded lettuce
- 1 tomato (thinly sliced)
- 1/2 red onion (thinly sliced)
- 1/2 cup garlic yogurt sauce (or tahini sauce)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground lamb, grated onion, garlic, cumin, coriander, paprika, cinnamon, salt, and pepper. Mix well until fully combined and sticky in texture.
- Transfer the mixture to a food processor and pulse until smooth. This helps the meat hold together and mimic authentic doner texture.
- Press the mixture tightly into a loaf pan. Bake for 35–40 minutes, or until cooked through and browned on top.
- Let the meat rest for 10 minutes, then slice thinly with a sharp knife.
- Serve in warm pita bread with lettuce, tomato, onion, and garlic yogurt sauce. Add chili sauce for extra heat if desired.
