- 1 cup all-purpose flour
- 1/2 cup almond meal
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/2 cup pumpkin puree (canned or homemade)
- 2 large eggs
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
- 3 tbsp cold water
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour and sugar, then cut in cold butter until crumbly. Gradually add cold water to form dough. Roll out and press into a tart pan.
- Bake the crust for about 15 minutes until lightly golden. Let cool.
- In another bowl, whisk together pumpkin puree, almond meal, eggs, cinnamon, nutmeg, and sugar until smooth.
- Pour the filling into the cooled crust and spread evenly.
- Bake for an additional 30-35 minutes until the center is set and springs back when touched.
- Cool completely before slicing. Serve with whipped cream or ice cream.
