Ingredients

  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/2 cup pumpkin puree (canned or homemade)
  • 2 large eggs
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 3 tbsp cold water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour and sugar, then cut in cold butter until crumbly. Gradually add cold water to form dough. Roll out and press into a tart pan.
  3. Bake the crust for about 15 minutes until lightly golden. Let cool.
  4. In another bowl, whisk together pumpkin puree, almond meal, eggs, cinnamon, nutmeg, and sugar until smooth.
  5. Pour the filling into the cooled crust and spread evenly.
  6. Bake for an additional 30-35 minutes until the center is set and springs back when touched.
  7. Cool completely before slicing. Serve with whipped cream or ice cream.
