Ingredients

Scale
  • 1 can (20 oz) crushed pineapple (with juice)
  • 1 cup sugar
  • 4 large eggs (beaten)
  • 1/2 cup all-purpose flour
  • 1/2 cup melted butter
  • 1 tsp vanilla extract
  • 1/2 cup crushed buttery crackers (like Ritz)
  • 2 Tbsp melted butter (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
  2. In a large bowl, whisk together eggs, sugar, melted butter, flour, vanilla extract, and the entire can of crushed pineapple with juice until combined.
  3. Pour the mixture into the prepared baking dish and spread evenly.
  4. If using the topping, mix crushed crackers with melted butter and sprinkle over the pineapple mixture.
