A bold and flavorful twist on classic deviled eggs, featuring creamy chipotle mayo filling, charred corn, cotija cheese, and fresh cilantro.

- 6 hard-boiled eggs (peeled)
- 0.25 cup mayonnaise
- 1 tbsp chipotle mayo
- 1 tsp lime juice
- 0.5 cup corn kernels (charred or roasted)
- 2 tbsp cotija cheese (crumbled)
- 1 tbsp cilantro (fresh, chopped)
- 0.25 tsp paprika
- Salt and pepper (to taste)
Instructions
- Slice hard-boiled eggs in half and remove yolks.
- Mash yolks with mayonnaise, chipotle mayo, lime juice, salt, and pepper.
- Fold in half of the charred corn.
- Spoon or pipe yolk mixture into egg whites.
- Top with remaining corn, cotija cheese, cilantro, and a sprinkle of paprika.
- Chill or serve immediately.
