  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon all-purpose flour
  • ½ cup heavy cream
  • ½ cup whole milk
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon zest
  • ½ cup shredded white cheddar cheese
  • ¼ cup Parmesan cheese
  • ½ cup panko breadcrumbs
  • 1 tablespoon butter, melted
  • ¼ cup Parmesan cheese
  • 1 teaspoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F and place the pie crust in a 9-inch pie dish, crimping the edges decoratively. Brush the edges with egg wash and prick the bottom several times with a fork to prevent bubbling.
  2. Melt 2 tablespoons butter in a large skillet over medium heat. Add onion, celery, and red bell pepper, cooking until softened, about 4-5 minutes.
  3. Add minced garlic, Old Bay seasoning, smoked paprika, cayenne (if using), salt, and pepper. Sauté for 30 seconds until fragrant.
  4. Stir in the flour and cook for 1 minute, constantly stirring to create a roux. Gradually whisk in heavy cream and milk until smooth, then bring the mixture to a gentle simmer until it thickens enough to coat the back of a spoon.
  5. Reduce heat to low and stir in Dijon mustard, lemon zest, white cheddar, and ¼ cup Parmesan cheese until melted. Gently fold in the chopped shrimp.
  6. Pour the shrimp mixture into the prepared pie crust. In a small bowl, combine panko breadcrumbs, melted butter, remaining Parmesan, and parsley, then sprinkle evenly over the filling.
