- ¼ cup Parmesan cheese
- ½ cup panko breadcrumbs
- 1 tablespoon butter, melted
- ¼ cup Parmesan cheese
- 1 teaspoon fresh parsley, chopped
Instructions
- Preheat your oven to 375°F and place the pie crust in a 9-inch pie dish, crimping the edges decoratively. Brush the edges with egg wash and prick the bottom several times with a fork to prevent bubbling.
- Melt 2 tablespoons butter in a large skillet over medium heat. Add onion, celery, and red bell pepper, cooking until softened, about 4-5 minutes.
- Add minced garlic, Old Bay seasoning, smoked paprika, cayenne (if using), salt, and pepper. Sauté for 30 seconds until fragrant.
- Stir in the flour and cook for 1 minute, constantly stirring to create a roux. Gradually whisk in heavy cream and milk until smooth, then bring the mixture to a gentle simmer until it thickens enough to coat the back of a spoon.
- Reduce heat to low and stir in Dijon mustard, lemon zest, white cheddar, and ¼ cup Parmesan cheese until melted. Gently fold in the chopped shrimp.
- Pour the shrimp mixture into the prepared pie crust. In a small bowl, combine panko breadcrumbs, melted butter, remaining Parmesan, and parsley, then sprinkle evenly over the filling.
- Bake for 30-35 minutes until the top is golden brown and the filling is bubbling around the edges. Let the pie rest for 10 minutes before slicing.
- Slice into wedges and serve warm, offering extra lemon wedges on the side.
