French Silk Pie Cookies are a delightful treat inspired by the classic dessert.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup semi-sweet chocolate chips
- Whipped cream, for topping (optional)
- Chocolate shavings, for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and sugars: In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs and vanilla: Add the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Mix dry and wet ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in chocolate chips: Gently fold in the semi-sweet chocolate chips to incorporate them evenly into the dough.
- Scoop cookies: Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
- Cool: Remove the cookies from the oven and allow them to cool on the baking sheet for five minutes before transferring them to a wire rack to cool completely.
- Top with whipped cream: Once cooled, you can top each cookie with a dollop of whipped cream and sprinkle with chocolate shavings for a decorative touch.
