- 1 cup fruit chopped
- ¼ cup vegetables chopped (and peeled if necessary)
- ¼ to ½ cup pure apple juice no added sugar
- 2 Tablespoons raw honey
- ¼ teaspoon pure vanilla extract
- 3 Tablespoons gelatin preferably collagen, grass-fed
- 1 cup green grapes
- ¼ cup spinach
- 1 cup strawberries diced
- ¼ cup beets
- 1 cup peaches chopped
- ¼ cup carrots
- 1 cup blueberries
- ¼ cup zucchini
Instructions
- Choose and prepare your flavor base. Select one of the color combinations (green, red, orange, or blue/purple) and wash all produce thoroughly. Peel vegetables like beets and carrots, and remove any stems from fruits.
- Blend fruits and vegetables together. Combine 1 cup of your chosen fruit with ¼ cup of the corresponding vegetable in a high-powered blender. Pulse a few times before blending on high to prevent chunks from getting stuck under the blades.
- Add liquid ingredients to the mixture. Pour in ¼ cup apple juice (add up to ¼ cup more if needed for blending), 2 tablespoons raw honey, and ¼ teaspoon vanilla extract. Blend until completely smooth and no fruit or vegetable pieces remain.
- Transfer the mixture to a small saucepan. Heat over medium-low heat until warm but not boiling—about 2-3 minutes. The mixture should be just hot enough to dissolve the gelatin.
- Gradually whisk in the gelatin. Sprinkle the 3 tablespoons of gelatin over the warm fruit mixture one tablespoon at a time, whisking continuously to prevent clumping. Continue whisking until fully dissolved and the mixture appears smooth and glossy.
- Pour into molds or a lined dish. Transfer the mixture to silicone candy molds for shaped snacks, or pour into a parchment-lined 8×8 dish for snacks you can cut into squares later. Tap the molds gently against the counter to remove any air bubbles.
- Refrigerate until fully set. Place in the refrigerator for at least 2 hours, though I prefer leaving them overnight for the perfect chewy texture. They should feel firm to the touch when properly set.
- Remove from molds and store. If using a dish, cut into desired shapes. Store your homemade fruit snacks in an airtight container in the refrigerator for up to one week.
