Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
- Melt 3/4 cup of the chocolate chips with the coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until smooth and completely melted.
- Whisk the eggs, coconut sugar, and vanilla extract together in a large bowl until well combined. Pour in the melted chocolate mixture while still warm and stir until incorporated.
- In a separate bowl, combine the chocolate protein powder, almond flour, cocoa powder, and salt. Add this dry mixture to the wet ingredients and stir until just combined.
- Fold in the remaining 3/4 cup of chocolate chips, distributing them evenly throughout the batter.
- Transfer the batter to your prepared baking pan, spreading it evenly into the corners.
- Bake for 22-25 minutes, or until the edges are set but the center still appears slightly underdone.
- Allow the brownies to cool completely in the pan before lifting out with the parchment paper. Refrigerate for about an hour before slicing into 12 equal squares.
