Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt in a medium bowl.
- Cream butter and brown sugar in a large bowl until light and fluffy.
- Add egg, molasses, and vanilla; mix until smooth.
- Gradually add dry ingredients to wet ingredients until a soft dough forms.
- In a small bowl, beat cream cheese, powdered sugar, and vanilla until smooth for the cheesecake filling.
- Roll cookie dough into 1–1.5 tbsp balls, slightly flatten, then place a small dollop of cheesecake filling in the center and fold edges to enclose partially.
- Place on prepared baking sheets and bake for 10–12 minutes until edges are set but centers remain soft.
- Cool on baking sheet 5 minutes, then transfer to wire rack to cool completely.
