Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt in a medium bowl.
  3. Cream butter and brown sugar in a large bowl until light and fluffy.
  4. Add egg, molasses, and vanilla; mix until smooth.
  5. Gradually add dry ingredients to wet ingredients until a soft dough forms.
  6. In a small bowl, beat cream cheese, powdered sugar, and vanilla until smooth for the cheesecake filling.
  7. Roll cookie dough into 1–1.5 tbsp balls, slightly flatten, then place a small dollop of cheesecake filling in the center and fold edges to enclose partially.
  8. Place on prepared baking sheets and bake for 10–12 minutes until edges are set but centers remain soft.
  9. Cool on baking sheet 5 minutes, then transfer to wire rack to cool completely.
