These Gingerbread Cookie Bars are soft, chewy, and packed with warm holiday spices. Easy to make in a single pan, they’re perfect for cutting into squares and sharing at parties or for a cozy treat with coffee or tea.

- 2 1/4 cups all-purpose flour
- 2 tsp ground ginger
- 1 tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp nutmeg
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1 large egg
- 1/2 cup molasses
- 1 tsp vanilla extract
- Optional Topping: Powdered sugar glaze, chopped nuts, or chocolate drizzle
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
- In a medium bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
- In a large bowl, cream butter and brown sugar until light and fluffy.
- Beat in egg, molasses, and vanilla until smooth.
- Gradually add dry ingredients to wet ingredients until a soft dough forms.
- Press dough evenly into prepared pan.
- Bake for 20–25 minutes until set and lightly browned around edges.
- Allow to cool completely in the pan, then cut into bars.
- Optional: Drizzle with glaze or sprinkle with nuts or chocolate for decoration.
