  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1/4 cup molasses
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar, for rolling

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
  3. In a large bowl, cream butter and brown sugar until light and fluffy.
  4. Beat in egg, molasses, and vanilla until smooth.
  5. Gradually mix in dry ingredients until a soft dough forms.
  6. Roll dough into 1–1.5 tbsp balls and coat generously in powdered sugar.
  7. Place on baking sheets 2 inches apart and bake 10–12 minutes, until edges are set but centers are soft.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
