Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup apple cider, reduced to 1/4 cup
  • 1 1/2 cups powdered sugar
  • 2 tablespoons apple cider
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the reduced apple cider.
  6. Cover the dough and chill for at least 30 minutes.
  7. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  8. Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets.
  9. Bake for 9-11 minutes, or until the edges are lightly golden.
  10. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  11. While the cookies cool, prepare the glaze: In a small bowl, whisk together the powdered sugar, 2 tablespoons of apple cider, and 1/2 teaspoon of vanilla extract until smooth.
  12. Once the cookies are completely cool, drizzle the glaze over them.
  13. Let the glaze set before storing the glazed apple cider cookies in an airtight container.

  • Reducing the apple cider concentrates its flavor, so don’t skip this step for the best apple cider cookie taste.
