Ingredients

  • 2 cups all-purpose flour (sifted)
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 eggs (room temperature)
  • 1/2 cup Greek yogurt (or sour cream)
  • 1.5 cups fresh strawberries (chopped)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup powdered sugar (sifted)
  • 2 tbsp lemon juice (fresh)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well. Stir in yogurt and vanilla.
  4. In another bowl, combine flour, baking soda, and salt.
  5. Add dry ingredients to wet ingredients, mixing until just combined.
  6. Fold in strawberries tossed with a tablespoon of flour.
  7. Pour batter into loaf pan and bake for 55–60 minutes.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack.
  9. Mix glaze ingredients and drizzle over slightly warm bread.
