- 2 cups all-purpose flour (sifted)
- 1 cup granulated sugar
- 1/2 cup unsalted butter (softened)
- 2 eggs (room temperature)
- 1/2 cup Greek yogurt (or sour cream)
- 1.5 cups fresh strawberries (chopped)
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/4 tsp salt
- 3/4 cup powdered sugar (sifted)
- 2 tbsp lemon juice (fresh)
Instructions
- Preheat the oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well. Stir in yogurt and vanilla.
- In another bowl, combine flour, baking soda, and salt.
- Add dry ingredients to wet ingredients, mixing until just combined.
- Fold in strawberries tossed with a tablespoon of flour.
- Pour batter into loaf pan and bake for 55–60 minutes.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
- Mix glaze ingredients and drizzle over slightly warm bread.
