  • 1 teaspoon ginger (minced)
  • 3 tablespoons gluten-free soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • sesame seeds (optional)

Instructions

  1. Combine warm water with yeast and sugar in a large bowl. Gently mix with a fork and let it sit for 10-15 minutes until bubbly and active.
  2. Add the flour slowly to the yeast-water mixture, stirring until fully combined to form a sticky dough.
  3. Knead the dough on a lightly floured surface until smooth and elastic, about 5-7 minutes. Shape into a sphere and let it rise covered for at least 1 hour.
  4. Sauté in a skillet over medium heat with sesame oil, napa cabbage, carrot, garlic, and ginger for about 3-4 minutes until tender.
  5. Cook ground pork (or mushrooms) in the skillet, stirring until fully cooked, about 10 minutes. Let cool, then stir in soy sauce and vinegar.
  6. Roll the risen dough into a log and divide it into 12-14 equal pieces.
  7. Shape each piece into a disc about ⅛ inches thick, softening with water if necessary.
  8. Fill each disc with a spoonful of the meat mixture, pinching the dough around it to create pleats.
  9. Steam filled buns in a bamboo steamer or basket over boiling water for about 8 minutes, letting them sit an additional 1-2 minutes off heat.
  10. Serve warm, garnished with optional sesame seeds.
