- 1 cup Unsalted Butter (Room temperature)
- 1/2 cup Powdered Sugar

- 1 large Egg Yolk (Room temperature)
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Almond Extract (optional)
- 2 tablespoons Heavy Cream (or Milk)
- 2 tablespoons Granulated Sugar
- 1 cup Dark Chocolate Wafers
- Sprinkles, Chopped Nuts, or Chopped Chocolate (as desired)
Instructions
- Prepare the Piping Bag: Fit a piping bag with a large pastry tip and line two sheet pans with parchment paper.
- Combine the Dry Ingredients: In a small bowl, sift or whisk together the gluten free flour, almond flour, and kosher salt.
- Cream the Butter and Sugar: In a stand mixer, combine the unsalted butter and powdered sugar.
- Mix in Eggs and Extracts: Add in the egg, egg yolk, vanilla extract, and almond extract. Mix until fully combined.
- Incorporate the Dry Ingredients: Gradually add the flour mixture and heavy cream to the wet mixture. Mix until smooth.
- Fill the Piping Bag: Carefully transfer the cookie dough into the prepared pastry bag.
- Pipe Cookie Shapes: Pipe the cookie dough into circles on the parchment paper, leaving space between each.
- Chill the Cookies: Place the piped cookies in the refrigerator for at least 30 minutes.
- Preheat the Oven: Preheat your oven to 365°F.
- Add a Sweet Touch: If desired, sprinkle granulated sugar over the chilled cookies before baking.
- Bake to Perfection: Bake the cookies for 14-16 minutes until light golden brown.
- Cool the Cookies: Let the cookies cool on the sheet pan for a few minutes before transferring to a cooling rack.
