  • 1 cup Dark Chocolate Wafers
  • Sprinkles, Chopped Nuts, or Chopped Chocolate (as desired)

Instructions

  1. Prepare the Piping Bag: Fit a piping bag with a large pastry tip and line two sheet pans with parchment paper.
  2. Combine the Dry Ingredients: In a small bowl, sift or whisk together the gluten free flour, almond flour, and kosher salt.
  3. Cream the Butter and Sugar: In a stand mixer, combine the unsalted butter and powdered sugar.
  4. Mix in Eggs and Extracts: Add in the egg, egg yolk, vanilla extract, and almond extract. Mix until fully combined.
  5. Incorporate the Dry Ingredients: Gradually add the flour mixture and heavy cream to the wet mixture. Mix until smooth.
  6. Fill the Piping Bag: Carefully transfer the cookie dough into the prepared pastry bag.
  7. Pipe Cookie Shapes: Pipe the cookie dough into circles on the parchment paper, leaving space between each.
