Description

These golden-crusted focaccia muffins deliver all the aromatic pleasure of traditional Italian bread in a convenient, handheld form, infused with fragrant rosemary and savory garlic.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 ½ teaspoons instant yeast
  • 1 teaspoon salt
  • ¾ cup warm water (about 110°F)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 2 tablespoons olive oil
  • ½ teaspoon flaky sea salt
  • ¼ teaspoon black pepper
  • Grated Parmesan for extra savory depth
  • A sprinkle of red pepper flakes for a bit of heat
  • Sun-dried tomatoes or olives for Mediterranean flair

Instructions

  1. Combine the dry ingredients in a large mixing bowl – flour, instant yeast, and salt. Whisk together to ensure even distribution.
  2. Add in the warm water and olive oil, then mix with a wooden spoon until a shaggy dough forms. Switch to kneading with your hands until smooth and elastic, about 3-5 minutes.
  3. Cover the bowl with a damp kitchen towel or plastic wrap and let the dough rise in a warm spot for 45-60 minutes until doubled in size.
  4. Prepare the topping while the dough rises by combining minced garlic, chopped rosemary, olive oil, black pepper, and half the flaky salt in a small bowl.
  5. Preheat the oven to 400°F (200°C) and generously grease a 12-cup muffin tin with olive oil.
  6. Punch down the risen dough and divide it evenly among the muffin cups.
  7. Spoon the garlic-rosemary oil mixture onto each muffin, and sprinkle with remaining flaky sea salt and any optional add-ins.
  8. Bake for 18-20 minutes until the tops are golden brown and aromatic.
  9. Allow to cool in the tin for 5 minutes before transferring to a wire rack.

Notes

  • For best flavor, use fresh rosemary.
  • Experiment with different add-ins like olives or sun-dried tomatoes.
  • Store leftovers in an airtight container at room temperature.
