Description
This hearty Golumpki Soup captures the traditional flavors of Polish stuffed cabbage rolls in a fraction of the time.

- 1 pound ground beef
- 4 cups chopped green cabbage
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 can (8 ounces) tomato sauce
- 4 cups beef broth (low-sodium)
- 1 cup cooked white rice
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon sweet paprika
- 1 teaspoon sugar
- 1 bay leaf
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- In a large soup pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat if needed.
- Add chopped onion and garlic to the beef. Cook for 2–3 minutes until fragrant and softened.
- Stir in the diced tomatoes, tomato sauce, salt, pepper, paprika, and sugar. Let simmer for 3–4 minutes.
- Pour in beef broth and add the bay leaf. Bring to a gentle boil.
- Stir in chopped cabbage. Cover and simmer for 25–30 minutes until the cabbage is tender.
- Add the cooked rice and stir. Let simmer uncovered for 5–10 minutes to thicken slightly.
- Taste and adjust seasonings as needed. Remove bay leaf before serving.
- Serve hot with chopped parsley on top and a slice of crusty bread.
