Grilled Salsa Verde Pepper Jack Chicken is a delicious and easy-to-make dish, perfect for dinner.

- 4 boneless, skinless chicken breasts
- 1 cup salsa verde
- 1 cup shredded pepper jack cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- ½ teaspoon salt
- ½ teaspoon black pepper
- Fresh cilantro, for garnish (optional)
Instructions
- In a large bowl, combine the salsa verde, olive oil, garlic powder, onion powder, cumin, salt, and black pepper. Add the chicken breasts and coat them thoroughly. Cover and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat (about 375°F to 400°F).
- Remove the chicken from the marinade and let any excess marinade drip off.
- Place the chicken breasts on the preheated grill. Cook for about 6-7 minutes on one side.
- Turn the chicken breasts over and cook for an additional 6-7 minutes or until the internal temperature reaches 165°F.
- In the last 2 minutes of cooking, sprinkle the shredded pepper jack cheese generously over each chicken breast. Close the grill lid to melt the cheese.
- Once the chicken is fully cooked and the cheese is melted, remove the chicken from the grill. Let it rest for a few minutes.
- Optionally, garnish with fresh cilantro before serving.

- Let the chicken marinate for more flavor.
- Adjust the spice level by adding more or less cumin.
