- 1 bunch fresh asparagus spears, trimmed
- 2 tbsp olive oil, divided

- 1 cup cooked jasmine rice, quinoa, or cauliflower rice

- 1/2 cup mayonnaise or Greek yogurt
- 3 cloves garlic, minced
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp honey (optional)
- Salt and black pepper to taste

- Fresh herbs (parsley or dill), for garnish (optional)
- Red pepper flakes, for garnish (optional)
Instructions
- Toss the shrimp with 1 tbsp olive oil, salt, pepper, and a squeeze of lemon juice. Toss the asparagus with the remaining 1 tbsp olive oil, salt, and pepper. Let them marinate briefly.
- In a small bowl, whisk together mayonnaise or Greek yogurt, minced garlic, lemon juice, Dijon mustard, honey (if using), salt, and pepper for the creamy garlic sauce. Taste and adjust seasonings. Chill the sauce.
- Preheat your grill or grill pan to medium-high heat.
- Grill the shrimp for 2-3 minutes per side, until pink and cooked through.
- Grill the asparagus for 5-7 minutes, turning occasionally, until crisp-tender with char marks.
- Assemble the bowls: Start with a base of cooked rice or your chosen grain. Top with the grilled shrimp and grilled asparagus. Drizzle generously with the creamy garlic sauce.
- Garnish with lemon wedges, fresh herbs, and red pepper flakes if desired.

- For a lighter sauce, use Greek yogurt instead of mayonnaise.
