- 14 ounces smoked sausage, sliced
- 1 cup chopped onion
- 1 cup chopped bell pepper (red or green)
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Cajun seasoning (adjust to taste)
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup long-grain white rice, uncooked
- 2 cups chicken broth
- 2 tablespoons chopped green onions (for garnish)
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Slice the smoked sausage into thick coins. Heat olive oil in a large skillet over medium heat, then add the sausage. Sear until golden brown and slightly crisp. Remove from the pan and set aside.
- In the same skillet, add chopped onion and bell pepper. Sauté for 3-4 minutes until soft and translucent. Add minced garlic and cook for 1 more minute.
- Stir in tomato paste and Cajun seasoning. Let it cook for 1-2 minutes to deepen the flavor.
- Return the sausage to the skillet. Add the black beans and stir. Pour in the chicken broth and scrape any browned bits off the bottom.
- Add the uncooked rice. Stir to combine everything. Bring to a boil, reduce heat, cover, and simmer for 18-20 minutes until rice is cooked and liquid is absorbed.
- Remove from heat, uncover, and fluff with a fork. Garnish with chopped green onions and parsley before serving.
