- 1 package turkey bacon (12 slices)
- 1 cup fresh herbs (parsley, chives, dill) (Chopped finely)
- 1 package puff pastry (2 sheets)
- 1 egg beaten for egg wash

Instructions
- Gather all your ingredients and chop the fresh herbs finely.
- Heat a skillet over medium heat and cook the turkey bacon until crispy, about 5-7 minutes.
- Once cooked, place the bacon on a paper towel to absorb excess grease.
- Roll out the puff pastry on a floured surface until smooth and even.
- Cut the rolled pastry into rectangles, about 4×5 inches.
- Place a slice of turkey bacon on each pastry rectangle and sprinkle with chopped herbs.
- Carefully roll the pastry around the bacon and pinch the edges to seal securely.
- Brush the tops of each roll with the beaten egg.
- Sprinkle a pinch of salt and pepper on top.
- Preheat your oven to 400°F (200°C) and place the rolls on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown.
- Allow the rolls to cool for a few minutes before serving.
