Honeycrisp Apple Kale Salad is a fresh and crunchy salad that combines the sweetness of apples with the earthiness of kale.
Ingredients
Scale
- 4 cups kale, chopped
- 2 Honeycrisp apples, cored and thinly sliced
- ½ cup walnuts, chopped (or any preferred nuts)
- ¼ cup dried cranberries
- ½ cup feta cheese, crumbled (optional)
- ¼ cup red onion, thinly sliced
- ¼ cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Rinse the kale leaves under cold water. Remove the tough stems and chop the leaves into bite-sized pieces. Place them in a large bowl.
- Drizzle a little olive oil over the kale. Massage the leaves for about 2-3 minutes until they become tender and vibrant in color.
- Core and slice the Honeycrisp apples thinly. Add them to the bowl with the kale.
- Add the chopped walnuts, dried cranberries, feta cheese (if using), and red onion to the mixed salad.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
- Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.
- For enhanced flavors, you can let the salad chill in the refrigerator for about 10 minutes before serving.
- Give the salad a final toss and it’s ready to be enjoyed!
