- 4 boneless, skinless chicken thighs
- 1 tablespoon olive oil
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper
- ½ teaspoon garlic powder
- Salt and black pepper to taste
- ⅓ cup crumbled feta cheese
- ¼ cup honey
- ½ teaspoon red pepper flakes
- 1 tablespoon lemon juice
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken thighs dry and rub them with olive oil.
- Sprinkle with paprika, garlic powder, cayenne, salt, and black pepper.
- Place seasoned chicken in a baking dish.
- Roast for 25–30 minutes until golden and cooked through.
- While chicken bakes, gently warm honey in a small saucepan over low heat.
- Stir red pepper flakes and lemon juice into the honey. Let bubble for one minute.
- Remove chicken from oven, scatter feta over the top.
- Drizzle with the warm hot honey mixture.
- Return to oven for 5 minutes until feta softens and honey caramelizes.
- Let sit for a couple of minutes before serving.
- Sprinkle with fresh parsley.
