Ingredients
- 8 oz spaghetti
- 2 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 28 oz canned diced tomatoes (fire-roasted recommended)
- 2 cups vegetable broth
- 2 tsp Italian seasoning
- ½ cup freshly grated Parmesan cheese
Instructions
- Set your Instant Pot to sauté mode. Add olive oil and heat. Sauté chopped onion until translucent (about 3 minutes). Add minced garlic for the last minute.
- Stir in canned diced tomatoes (with juice), vegetable broth, and Italian seasoning.
- Break spaghetti in half and push it into the tomato mixture until mostly submerged.
- Seal the lid and set to high pressure for 8 minutes.
- Perform a quick release after cooking.
- Stir well to combine. Top with freshly grated Parmesan cheese and drizzle with olive oil before serving.
