- 3/4 cup pastina or tiny pasta (like star-shaped, acini di pepe, or orzo)
- 1/2 cup finely diced carrots
- 1/2 cup finely diced celery
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/4 cup grated Parmesan cheese (plus more for garnish)
- 2 tablespoons chopped fresh parsley
- salt, to taste
- black pepper, to taste
Instructions
- Heat olive oil in a soup pot over medium heat. Add carrots, celery, and garlic. Sauté for about 5 minutes until softened.
- Pour in the chicken broth and bring to a gentle boil, scraping up any browned bits from the bottom.
- Stir in the pastina and reduce heat to a simmer. Cook for 5–7 minutes, or until the pasta is tender.
- Season the soup with salt and pepper to taste. Let it simmer an additional 2 minutes.
- Serve hot, topped with grated Parmesan and fresh parsley.
