- 1 lb Italian sausage
- 12 oz bow tie pasta (farfalle)
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons tomato paste
- 1 small onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1/2 cup reserved pasta water (optional)
Instructions
- In a large skillet over medium heat, add olive oil and cook the Italian sausage, breaking it up until fully browned. Remove and set aside.
- In the same skillet, add more olive oil if needed. Sauté chopped onions and minced garlic until fragrant and translucent.
- Stir in diced tomatoes and tomato paste. Season with salt and pepper. Simmer for 10 minutes to thicken and develop flavor.
- Meanwhile, boil the bow tie pasta until al dente. Reserve 1/2 cup of pasta water before draining.
- Return sausage to the skillet. Add cooked pasta and a splash of pasta water. Toss everything together to coat evenly.
- Sprinkle in chopped parsley and grated Parmesan. Serve hot with extra cheese if desired.
