- 1 pound Italian sausage, casings removed
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups cubed Russet potatoes
- 4 cups chopped kale
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Preheat oven to 375°F.
- In a large skillet over medium-high heat, cook the sausage, breaking it up as it cooks, until browned, about 5-7 minutes.
- Add the onion and garlic and cook for an additional 2-3 minutes until fragrant.
- Stir in the cubed potatoes, kale, chicken broth, heavy cream, oregano, and red pepper flakes. Season with salt and pepper to taste.
- Transfer the mixture to a 9×13-inch baking dish.
- Bake for 25-30 minutes, or until the potatoes are tender and the casserole is bubbly.
- Remove from the oven and let stand for 5 minutes before serving. Top with grated Parmesan cheese.
