- 1 cup white granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup unsalted butter
- 1 teaspoon baking soda
- 1 1/2 cups roasted, salted peanuts
- 2 tablespoons finely chopped fresh jalapeño peppers (about 2–3 small peppers)
Instructions
- Line a baking sheet with parchment paper and set aside.
- In a medium saucepan, combine the sugar, corn syrup, and butter. Cook over medium heat, stirring constantly, until the mixture reaches 300°F on a candy thermometer, about 10-12 minutes.
- Remove the pan from the heat and quickly stir in the baking soda. The mixture will foam up.
- Immediately stir in the peanuts and chopped jalapeños until well combined.
- Quickly pour the mixture onto the prepared baking sheet, spreading it out into a thin layer.
- Allow the brittle to cool completely, about 20-30 minutes.
- Once cooled, break the brittle into pieces and enjoy!
