- 1 tsp liquid smoke
Instructions
- Combine the ground pork and ground beef in a large mixing bowl, using your hands to gently mix until just integrated.
- Add the curing salt, garlic powder, mustard seeds, black pepper, and liquid smoke to the meat mixture.
- Fold in the diced jalapeños, ensuring they’re evenly distributed throughout the meat.
- Incorporate the shredded pepper jack cheese with a gentle folding motion.
- Cover the mixture and refrigerate for at least 1 hour.
- Form the meat mixture into patties or stuff into sausage casings.
- Cook the sausages in a skillet over medium heat for about 4-5 minutes per side until they reach an internal temperature of 160°F.
- Let the cooked sausages rest for 3-5 minutes before serving.

- For a milder sausage, remove all seeds and membranes from the jalapeños.
