Instructions
- Bring the steak to room temperature by taking it out of the fridge 10-30 minutes before cooking. Pat it dry with paper towels.
- Season both sides of the steak generously with salt and freshly ground black pepper.
- Heat a heavy skillet or cast-iron pan over medium-high heat. Add olive oil and a knob of butter until shimmering.
- Sear the steak for 3-5 minutes per side, depending on thickness and desired doneness, until a crust forms.
- Add the smashed garlic cloves and herb sprigs to the pan alongside the steak during the last few minutes of searing.
- Remove the steak from the pan, tent it loosely with foil, and let it rest for 5 minutes.
- Lower the heat to medium. Melt butter in the same pan. Add minced garlic and sauté until fragrant, about 30 seconds.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in the grated Parmesan cheese and optional Dijon mustard or smoked paprika.
- Season the sauce with salt and pepper to taste. Let it thicken slightly until it coats the back of a spoon.
- Return the rested steak to the pan and spoon the creamy garlic sauce over it. Warm for one minute.
- Slice the steak against the grain and pour any extra sauce on top.
- Garnish with chopped fresh parsley.
- Serve immediately with your favorite sides.
