  • 4 boneless, skinless chicken breasts (about 2 lbs)
  • 1 lb mushrooms (white or cremini), sliced
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil or avocado oil
  • 1 tablespoon butter or ghee
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ teaspoon dried thyme
  • ½ teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella or Gruyère cheese
  • Optional: Fresh parsley or chives for garnish

Instructions

  1. Set to 375°F (190°C). Pat chicken dry and season with salt and pepper.
  2. In an oven-safe skillet, heat olive oil and butter over medium-high heat. Sear chicken 4–5 minutes per side until golden. Remove and set aside.
  3. Add mushrooms to the skillet and cook 5–7 minutes until browned. Stir in minced garlic and cook 1 more minute.
  4. Pour in chicken broth, scraping up brown bits from the pan. Simmer for 2 minutes.
  5. Stir in heavy cream, thyme, and onion powder. Simmer 3–5 minutes until slightly thickened.
  6. Return chicken to skillet, nestle into the sauce, and spoon sauce over top.
  7. Sprinkle cheese over chicken and bake 15–20 minutes until chicken is cooked through (165°F internal temperature).
  8. Broil 2–3 minutes for a golden top if desired. Garnish with parsley or chives before serving.
