- 4 boneless, skinless chicken breasts (about 2 lbs)
- 1 lb mushrooms (white or cremini), sliced
- 4 cloves garlic, minced
- 1 tablespoon olive oil or avocado oil
- 1 tablespoon butter or ghee
- 1 cup heavy cream
- ½ cup chicken broth
- ½ teaspoon dried thyme
- ½ teaspoon onion powder
- Salt and pepper, to taste
- 1 cup shredded mozzarella or Gruyère cheese
- Optional: Fresh parsley or chives for garnish
Instructions
- Set to 375°F (190°C). Pat chicken dry and season with salt and pepper.
- In an oven-safe skillet, heat olive oil and butter over medium-high heat. Sear chicken 4–5 minutes per side until golden. Remove and set aside.
- Add mushrooms to the skillet and cook 5–7 minutes until browned. Stir in minced garlic and cook 1 more minute.
- Pour in chicken broth, scraping up brown bits from the pan. Simmer for 2 minutes.
- Stir in heavy cream, thyme, and onion powder. Simmer 3–5 minutes until slightly thickened.
- Return chicken to skillet, nestle into the sauce, and spoon sauce over top.
- Sprinkle cheese over chicken and bake 15–20 minutes until chicken is cooked through (165°F internal temperature).
- Broil 2–3 minutes for a golden top if desired. Garnish with parsley or chives before serving.

- Use thighs for extra juiciness and flavor.
- Cremini or white mushrooms both work great.
- Gruyère adds elegance, mozzarella adds creaminess.
- Substitute coconut cream for a dairy-free version.
