- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3 cups old-fashioned oats
- 1 1/2 cups semisweet chocolate chips
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the butter, brown sugar, and granulated sugar until light and fluffy, about 2–3 minutes.
- Add eggs and vanilla extract, mixing until smooth.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients and mix until just combined.
- Stir in oats, chocolate chips, coconut, and pecans until evenly distributed.
- Drop 2–3 tbsp-sized dough balls onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 12–15 minutes or until edges are golden but centers remain soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
