These Lemon Brownies are tangy, sweet, and wonderfully moist with a rich lemon flavor and a soft, fudgy texture.

- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 3/4 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/2 cup powdered sugar (for optional glaze)
- 1 tablespoon lemon juice (for glaze)
Instructions
- Preheat oven to 350°F (180°C). Line an 8×8-inch baking pan with parchment paper or lightly grease.
- In a medium bowl, whisk together melted butter and sugar until smooth.
- Add eggs, vanilla extract, salt, lemon zest, and lemon juice. Mix until fully combined.
- In another bowl, whisk together flour and baking powder. Gently fold into the wet ingredients until just combined.
- Pour batter into prepared pan and smooth the top with a spatula.
- Bake for 20–25 minutes, or until a toothpick inserted comes out mostly clean with a few moist crumbs.
- Cool completely in the pan on a wire rack.
- Optional Lemon Glaze: Mix powdered sugar and lemon juice until smooth. Drizzle over cooled brownies.
- Cut into squares and serve.
Notes
- Store leftovers in an airtight container at room temperature.
- For extra lemon flavor, add more lemon zest to the batter.
