- ½ cup unsalted butter, room temperature
- 1 (8-ounce) package cream cheese, room temperature
- 1 teaspoon fresh lemon zest
- 1 tablespoon fresh lemon juice
- 1 ½ cups granulated sugar
- 2 eggs, room temperature
- 1 teaspoon lemon extract
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 cup powdered sugar, divided
- 3 teaspoons baking powder
- ½ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Beat the softened butter and cream cheese together in a large bowl for about 2 minutes, until light and fluffy.
- Add the lemon zest, lemon juice, granulated sugar, eggs, lemon extract, and vanilla extract to the butter mixture. Beat for another 1-2 minutes.
- Whisk together the flour, 1/2 cup of powdered sugar, baking powder, and salt in a separate bowl. Gradually add to the wet ingredients, mixing on low speed until combined.
- Chill the dough for at least 30 minutes in the refrigerator.
- Coat chilled dough balls in powdered sugar and place on prepared baking sheets.
- Bake for 12-15 minutes until edges are set, but centers look slightly underdone.
- Allow cookies to cool on the baking sheets for 5 minutes before transferring to wire racks.
