Ingredients

  • 10 Medjool dates (pitted)
  • 1 cup Rolled oats
  • 1/2 cup Almonds (chopped)
  • 2 tablespoon Chia seeds
  • 2 tablespoon Lemon juice (freshly squeezed)
  • 1 tablespoon Lemon zest
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Turmeric powder

Instructions

  1. Prepare the dates: Remove the pits from the Medjool dates and soak them in hot water for about 5 minutes until softened.
  2. Blend the dates: Drain the soaked dates and place them into a food processor.
  3. Combine ingredients: Add the rolled oats, almonds, chia seeds, lemon juice, lemon zest, vanilla extract, and turmeric powder to the food processor. Blend until the mixture is dough-like.
  4. Form the energy balls: Using a small spoon, scoop out portions of the mixture and roll them into bite-sized balls.
  5. Chill and set: Refrigerate the energy balls for about 30 minutes to allow them to firm up.
