Zesty Lemon Turmeric Energy Balls for a Healthy Boost

- 10 Medjool dates (pitted)
- 1 cup Rolled oats
- 1/2 cup Almonds (chopped)
- 2 tablespoon Chia seeds
- 2 tablespoon Lemon juice (freshly squeezed)
- 1 tablespoon Lemon zest
- 1 teaspoon Vanilla extract
- 1 teaspoon Turmeric powder
Instructions
- Prepare the dates: Remove the pits from the Medjool dates and soak them in hot water for about 5 minutes until softened.
- Blend the dates: Drain the soaked dates and place them into a food processor.
- Combine ingredients: Add the rolled oats, almonds, chia seeds, lemon juice, lemon zest, vanilla extract, and turmeric powder to the food processor. Blend until the mixture is dough-like.
- Form the energy balls: Using a small spoon, scoop out portions of the mixture and roll them into bite-sized balls.
- Chill and set: Refrigerate the energy balls for about 30 minutes to allow them to firm up.
