- 1 tablespoon fajita seasoning
- 1 tablespoon olive oil
- 1 medium red onion, finely diced
- 2 medium tomatoes, diced
- 1 jalapeño, thinly sliced
- 1 avocado, chopped
- 2 green onions, chopped
- 1/4 cup chopped fresh cilantro
- 2 cups shredded cheddar cheese
- 1 large bag tortilla chips
- 1/2 cup sour cream
- 1/2 cup salsa
Instructions
- Preheat your oven to 350°F (180°C).
- Warm olive oil in a skillet over medium heat. Add diced red onion and cook for 5 minutes until soft.
- Add ground chicken to the skillet, breaking it apart, and cook for 8 to 10 minutes until browned.
- Stir in fajita seasoning and cook for 1 minute more. Remove from heat.
- Spread tortilla chips evenly on a large oven-safe skillet or baking sheet.
- Distribute the chicken mixture over the chips, then sprinkle with shredded cheddar cheese.
- Bake for about 10 minutes, or until the cheese is fully melted and bubbly.
- Remove from oven and top with avocado, diced tomatoes, jalapeño slices, green onions, and cilantro.
- Serve immediately with sour cream and salsa on the side.
