These crispy, cheesy mashed potato bites are the ultimate appetizer — filled with bacon, cheddar, and green onions.

- 2 cups mashed potatoes (leftover or freshly made)
- 1 large egg (lightly beaten)
- 1/2 cup shredded cheddar cheese (plus extra for topping)
- 1/4 cup crumbled cooked bacon
- 2 tablespoons chopped green onions (plus extra for garnish)
- 1/4 cup all-purpose flour or breadcrumbs (for binding)
- 1/4 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- sour cream or ranch dressing (for dipping)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a mini muffin tin or line a baking sheet with parchment paper.
- In a large bowl, combine mashed potatoes, egg, cheddar cheese, bacon, green onions, flour, salt, and pepper. Mix until well blended and holds its shape.
- Using a small scoop or spoon, portion the mixture into the muffin tin or onto the prepared baking sheet. Sprinkle a bit of extra cheese on top of each bite.
- Bake for 15–20 minutes, or until golden brown and crispy on the edges.
- Allow to cool slightly, then remove from the tin. Garnish with extra green onions and serve warm with sour cream or ranch dressing for dipping.
