- 2 cans white beans (cannellini or great northern, drained & rinsed)
- 0.33 cup extra-virgin olive oil
- 1 lemon (zest + 2 tbsp juice)
- 2 cloves garlic (minced)
- 1 tbsp parsley (chopped)
- 1 tsp dried oregano
- 0.5 tsp red pepper flakes
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 tbsp capers
- 2 tbsp sun-dried tomatoes (chopped)
- 1 tbsp fresh basil
- 0.25 cup feta cheese (crumbled)
Instructions
- Drain and rinse white beans; pat dry.
- Mix olive oil, lemon zest, lemon juice, garlic, parsley, oregano, salt, pepper, and red pepper flakes.
- Fold beans gently into the marinade.
- Let marinate at least 20 minutes or up to 24 hours.
- Taste and adjust seasoning before serving.
