- 2 cups mashed potatoes (leftover or freshly made)
- 2 large eggs
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup milk or heavy cream
- 2 tablespoons melted butter
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped chives or green onions (optional)
- Additional cheese for topping (optional)
Instructions
- Preheat oven to 400°F (205°C). Grease a muffin tin or line with silicone cups.
- In a large bowl, combine mashed potatoes, eggs, cheddar cheese, Parmesan, milk, melted butter, garlic powder, salt, and pepper.
- Mix until smooth and evenly combined. Fold in chives if using.
- Spoon the mixture into the muffin cups, filling about 3/4 full.
- Top each puff with a small pinch of extra cheese if desired.
- Bake for 20–25 minutes, or until the tops are golden and the edges are crispy.
- Let cool for 5 minutes before removing from the pan.
- Serve warm as a side dish, appetizer, or snack.
