Mediterranean Chicken Meatballs: An Amazing Ultimate Recipe

- 1 pound ground chicken
- 1 cup breadcrumbs (preferably whole wheat)
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large egg
- 1/4 cup milk
- 1 tablespoon olive oil (for cooking)
- Marinara sauce (for serving, optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, mint, garlic, onion powder, oregano, salt, pepper, egg, and milk.
- Using your hands, mix the ingredients until just combined. Be careful not to overmix.
- Scoop a tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is formed into meatballs.
- In a large skillet, heat olive oil over medium heat.
- Add the meatballs in batches, browning them on all sides for about 5-7 minutes. They don’t need to be fully cooked at this stage.
- Once browned, transfer the meatballs to the prepared baking sheet.
- Bake in the preheated oven for about 20 minutes or until the meatballs are cooked through and reach an internal temperature of 165°F (75°C).
- If desired, serve with marinara sauce over pasta or on their own with a side of roasted vegetables.
