Ingredients
- Shortbread crust: 1 cup salted butter, softened; 2/3 cup granulated sugar; 1 large egg yolk; 1 tsp pure vanilla extract; 2 1/4 cups cake flour; 1/4 tsp kosher salt
- Caramel layer: 1 cup salted butter; 1 (14 oz) can sweetened condensed milk; 1 cup light brown sugar, packed; 1/2 cup heavy cream; 1/4 cup golden or light corn syrup; 1 tsp vanilla
- Chocolate layer: 2 cups semi-sweet chocolate; 1/2 cup heavy cream; Flaky sea salt, for finishing
Instructions
- Preheat oven to 350°F. Line a 9×13 inch pan with parchment paper, leaving an overhang.
- Cream softened butter and granulated sugar until light and fluffy. Mix in egg yolk and vanilla.
- Gently fold in cake flour and kosher salt to form a shaggy dough. Press evenly into the prepared pan.
- Bake for 20-22 minutes until edges are golden. Let cool completely.
- In a saucepan, combine butter, sweetened condensed milk, brown sugar, heavy cream, and corn syrup. Whisk until smooth.
- Bring to a boil over medium heat, then simmer, stirring frequently, for 25-30 minutes until it reaches 225°F. Stir in vanilla and pour over the cooled crust.
- Chill for 1.5 to 2 hours until set.
- Microwave heavy cream until warm. Pour over semi-sweet chocolate, let sit for 1 minute, then whisk until smooth and glossy.
- Pour ganache over the set caramel and refrigerate until firm, about 1-2 hours or overnight.
- Sprinkle with flaky sea salt. Lift from pan and cut into squares.
