Mocha Marble Mini Cheesecakes are a delicious dessert combining chocolate and coffee flavors.

- For the crust:
- 1 cup chocolate cookie crumbs
- 2 tbsp granulated sugar
- 4 tbsp unsalted butter, melted
- For the cheesecake filling:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 2 tbsp brewed espresso, cooled
- 2 tbsp unsweetened cocoa powder
- For the topping:
- 1/4 cup chocolate ganache
- Chocolate shavings, for garnish
Instructions
- Preheat the oven to 325°F (165°C). Line a muffin tin with 6 paper liners.
- In a small bowl, mix chocolate cookie crumbs, sugar, and melted butter until well combined.
- Press the mixture evenly into the bottom of each muffin liner. Bake for 5 minutes and set aside to cool.
- In a mixing bowl, beat cream cheese and sugar until smooth and creamy.
- Add the egg and vanilla extract, mixing until fully combined.
- Divide the filling into two bowls. In one bowl, mix in the cooled espresso and cocoa powder to create the mocha layer.
- Spoon alternating dollops of vanilla and mocha filling over the crust in each liner.
- Use a toothpick or skewer to gently swirl the two flavors together, creating a marble effect.
- Bake the cheesecakes for 18-20 minutes, or until the centers are set but slightly jiggly.
- Let them cool to room temperature, then refrigerate for at least 2 hours.
- Drizzle chocolate ganache over the top of each cheesecake and garnish with chocolate shavings before serving.
Notes
- Make sure the cream cheese is softened for easy mixing.
- Allow the cheesecakes to chill completely for the best texture.
